Coconut Honey Pup Cake



Rory’s birthday just passed and we made her the cutest little birthday cake! Yes, I am that dog mama that makes cakes and cookies for every occasion just because I can! I couldn’t not do it for her. I mean c’mon look at that sweet face. Her cake was simple. I searched for weeks on the perfect cake on Pinterest that wouldn’t take too much effort to create so that Haidyn could essentially whip everything up for her baby sister.  I’m sure that we’ll make this for years to come.



INGREDIENTS:
  • 3 tablespoons refined coconut oil, melted
  • 2 tablespoons honey
  • 3 eggs
  • 1¾ cup (248 grams) all-purpose flour
  • Yogurt, for frosting
DIRECTIONS:
  1. Preheat oven to 350 degrees F.
  2. Grease two 7-ounce ramekins and set aside.
  3. In a medium bowl, whisk together the melted coconut oil, honey and eggs.

  4. Stir in the flour until totally absorbed.
  5. Divide the batter between the two ramekins and bake until lightly browned and firm when pressed in the center, 15 to 20 minutes.

  6. Cool in the ramekins, then remove them .

  7. Fill and frost with plain yogurt.
  8. For extra flare I shredded carrots to decorate the cake with.


Rory devoured this cake!Can you blame a girl? She got to have her cake and eat it too! Only because it was her birthday ;) We adapted this recipe for our girl.
