Crockpot Spicy Chicken Tacos




Cinco De Mayo is right around the corner and I've got you covered food wise. Nothing is better than a good spicy chicken taco until you realize that you can create this already easy dish in your crock pot! It's a dump crock pot recipe that you won't be able to live without.   This recipe is to die for and will have you craving it. This meal is easy to recreate and heats easily so it’s perfect for meal preps. I’ve done this meal for meal prep here. I added a little more spice because why not! You can add more heat or tone it down depending on the crowd you will be feeding. I snagged this recipe from a girlfriend at work as this is her go to potluck meal. It’s always gone in a matter of minutes. It doesn’t get easier than this recipe.
 
INGREDIENTS
  • 4 garlic cloves, thinly sliced
  • 2 lbs skinless chicken thighs ( I used breasts)
  • 1/2 cup prepared tomato salsa, plus more for serving (optional)
  • 1 to 2 tablespoons chopped canned chipotle chilies in adobo
  • 1 tablespoon chili powder
  • Coarse salt and ground pepper
  • Cilantro, shredded cheese, lime wedges, and sour cream, for serving (optional)

DIRECTIONS
  1. In a crock pot combine all ingredients and. cook on high, 4 hours (or on low, 8 hours).
  2. Shred chicken in the crock pot or transfer to a bowl to do so. ( My chicken was beyond fork tender so it almost shredded itself )
  3. Serve w/ corn tortillas shells and toppings, if desired.
