Dig Your Roots

I didn’t know how big of a FGL fan I was until last night. Now I'm ready to admit to everyone I'm a completed fan girl for them.  There wasn’t a song that I didn’t sing at the top of my lungs to, nor was there a song that I didn’t shake my ass off too. This concert was a Christmas gift for me to Jon since we don’t really ever get to do things one on one anymore. So I bought the cheapest tickets for decent seats and off we went!

It was the first time either of us were going to a concert that big for a huge band- and of course it had to be country. We had such a good time! I'm hoping for more concerts together in our future. I don't think Jon has ever seen me fan girl so hard in his life .  I didn’t even know I could party like that on a Thursday night, but I’m one happy Mama. The only thing I wished was that Haidyn was a little older so I could take her since this is one of her favorite bands as well, but there is always next time- I hope :)

Happy Friday Everyone!

Cheesy Zucchini Dog Muffins

We’re heading off onto vacation and these muffins will be Rory’s breakfast while she’s away at Grandma’s. Isn’t she so spoiled? I had some leftover zucchini from all of my zucchini baking this past week so I decided why not make someone for Rory too! I froze these right they cooled off so I could take them to my in laws for Ror.

  • 1 handful of shredded cheese
  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/4 cup canola oil
  • 1 cup of chicken stock
  • 2 eggs, beaten
  • cup grated zucchini

  1. Preheat oven to 375 ° F.
  2. Combine all ingredients with exception of the zucchini and mix well in a large bowl.
  3. Fold in zucchini until well incorporated.
  4. Grease muffin tins.
  5. Pour into paper lined muffin tins until each is about 3/4 full.
  6. Bake 25-30 minutes.

Recycle & Revamp

The two things you must know about me is that 1) I love a bargain and 2) I love to DIY. I am forever seeking the best deals and typically the best deals require some work, which I don’t mind since it saves me a little more than I would have. When we revamped our table to a farmhousetable, I also decided to revamp our chairs. I bought our chairs from a thrift store when we first moved in together as a married couple a few years ago.

The chairs were this awful gray color that we believed look so great with the rest of our décor in our home back in the day. New chairs were going to cost me around $50-$90 per chair. Now as you can see that wasn’t going to pair well with my beautiful table so I decided to redo them with a simple black glossy paint. Simple, easy and classic.  In love with what a can of spray paint can do! All in all, redoing all my chairs cost me about $12!
