Cheesy Hasselback Chicken


I love when I create a dinner that looks much more difficult than it truly is. You can make anything "hasselback" by cutting slits into whatever you want to stuff i.e chicken, pork, potatoes and etc and stuffing them with whatever you want!  How amazing is that? I've done it before  with potatoes here. This recipe came from a lazy dinner night that I knew my husband was starving after coming home from work. Okay, okay you caught me he's like that majority of the time but I had to step my game up with the dinners. Haidyn loved the ham and of course the cheese and Waymon devoured every crumb on his plate. Do you need anymore proof that hasselbacking is the way of life? I don't think so!

INGREDIENTS:


  • 4 thick boneless, skinless chicken breasts ( I used 2 to demonstrate)
  • 4-6 oz. deli-sliced ham, cut into strips ( I used ham , but you could use turkey if you prefer.)
  • 4 slices cheese, cut into strips (any kind of cheese you'd like, we used cheddar.)
  •  salt, pepper and parsely
DIRECTIONS
  1. Preheat oven to 350 degrees F.
  2. Slice slits about 1 incheapart in chicken breasts almost all the way through. Leave the bottom surface connected.

  3.  Place strips of ham and cheese into each slit.

  4. Sprinkle chicken with salt,pepper to taste and parsley . 

  5. Place on a greased baking sheet/dish of your choice .
  6. Bake  for 20 minutes, or until chicken is cooked through.  
    served with mix veggies and mash potatoes

Once Upon a Child EVERYTHING Sale Haul




I can’t help but love a good sale, but seriously who can resist the word SALE?  One of our favorite stores in Reno is Once Upon a Child. This store houses gently used toys, clothes and equipment for children. They buy and resell all of your unwanted items (that have met their criteria) . This past weekend was their amazing sale. The entire store was 25% off and all previous clearance items were 75% off. Our goal was to get Haidyn some 2T and 3T clothes since she’s growing like crazy and her 18m clothes are slowing no longer cutting, but that didn’t happen. We didn’t find clothes that we really liked at the time so we opted for getting her shoes and toys (her favorites). 

She’s fitting into 4’s and 5’s now (I know she has big feet, unlike her Mama) so we had to get her some new sneakers and dress shoes. We found a great pair of Vans glittery sneakers, a pair of black dress shoes and pair of my favorite leather moccasins for everyday.  
 

On the toy end, we scored on the great sushi puzzle Melissa & Doug Puzzle, a doctor kit and a V-tech Laptop. All toys were in great condition and just needed a little bleach wash before she got to play with them. She didn’t play with anything else the entire weekend except for these great toys.

I can’t wait to go back in a month or so to check out their new stuff. Even though, their enormous sale was happening they didn’t disappoint in their service. The line was long enough to go to the back of the store both times we stopped by, but OUAC Staff got through their line as efficiently as possible. This store is such a great asset to Reno community. I love having a local store to count on.

WEEK IN PICTURES | Swimming with Daddy


Swimming lessons are in full swing and I’ve already signed up Haidyn for another session this upcoming August through September. She’s beginning to become extremely active and we want to counter that with some activity. Yes, we’ve become those parents that jam pack our schedules to keep her busy as can be. It does get a little hectic at times, but it gets us and her into the routine of having to do something every single day.  I can’t swim (as most of you know) so it’s extremely important for me that she knows how in the event that I happen to topple off of the boat and panic in the water. Only kidding folks.  This swim lesson was the first with her Daddy.
 



 
 
It was all so cute until her new instructor didn’t interact with any of the children and literally counted down the minutes until the lesson was over. Luckily, Haidyn is becoming more and more familiar with the pool and being there with her new friends that she didn’t mind until the very end. Let’s hope next time is better than this time.

Lil' Miss Desings Accessories Monthly Bow Subscription- Month Four


This Month I got my bows as expected on the week of the 15th however, I feel like I got a little spoiled because the previous bow shipment came in late so I’ve received bows so close together. I’m happy to say the least and so is Haidyn. This month I wanted to applaud the packaging. Haidyn and I are a sucker for all things shiny, glittery and bold and this month’s packaging was all of the above with exception to the glitter. The packaging alone made us jump for joy and want to see what was in the package; as soon as I saw the package I HAD to open. Kudos to the shop this month for that! 

On to the bows, this month’s bows included a Tribal bow, Kitties bow and of course a Fourth of July bow. I wanted my summer bows to reflect everything summer / everything she loves for Haidyn. Haidyn is Native American and we plan to go to more Pow Wow’s because she loves them so much. This month I asked for a tribal bow and the shop delivered. The bow is beautiful and subtle all the same time. I can’t wait to get more in different colors for our future Pow Wows. I’d love to get some purple and reds as well.  I love what a statement it makes in her hair when she wears it; and Haidyn wears it with so much pride as she should. 



Haidyn loves exactly 2 things in this world other than family and that’s Mowglie and Sassafras.  She loves her Ate (big sister ) Sass so we opted for a kitty bow. Oh my goodness! This bow was so damn cute. I loved all of the different kinds of kitties on it. Haidyn knew exactly who was on the bow when she saw it. 


Last but not least, The Fourth of July bow. I’ve planned out all of my bows to order a specific holiday one before the holiday arrives because like a dummy I completely forgot for Easter and St.Patrick’s Day. I vouched to never do that again so now I have a beautiful Fourth of July bow! It’s very over the top due to everything going on, on the bow but I loved it like that. I feel like it suits the occasion. The bow was a little big for Haidyn, but she rocked it anyway and will probably continue to rock it for years to come.

You're not so much a 'baby' anymore, but since you act like it a majority of the time- we'll roll with it.

You're such a wonderful Ate to your baby sister.
 You always keep Daddy humble even when he picks on you. 
And you make our lives a hell of a lot livelier than we could've ever imagined. 
Thank you for saving me four blissful years ago and always being by my side when I need you the most.

I’ve been looking forward to this mini trip out to the in-laws since we left them on Fourth of July weekend.  I know it’s only been 2 weeks but we can’t help it. We love being out here with everyone, it’s a lot more fun than with everyone around. We came up this weekend to take part in the Sacred Visions  Pow Wow with the family .  Haidyn loves everything about Pow Wow’s from the colorful outfits to the music so we knew that we couldn’t miss this one, especially since we want her to eventually be a part of them when she gets a bit older . She still is adjusting to meeting so many new people at once, but she’s adjusting well.  Aside from the Pow Wow, we also just hung out with the Grandma and Grandpa for as much as we could. :).

Haidyn’s first swimming lessons were this past Saturday! (Insert loud applause here) It was a huge success overall. She was a little scared at first but as soon as we started warming up with all of the kids/parents she was comfortable and having a blast!.
