Freezable Breakfast Burritos!

Waymon gets up really early to go to work. So breakfast on the go is perfect for him. He can microwave this and eat it on the way to work. I made a weeks worth so that I can change up the ingredients for him. I'm not a burrito- rollin queen but I made these so it's not impossible! His tummy is happy and I'm not worried that my husband is starving to death in the morning. Everyone is happy!

Ingredients:

  • 1/2 pkg of bacon, diced
  • 1/2 pkg of precooked ham, diced
  • 3 eggs
  • 1 large potato, diced
  • 6 tortillas
  • 6 slices of cheese ( you can use shredded, he just likes this cheese better)

Directions:
  1. Heat your skillet to a medium- high heat.
  2. Spray some canola oil onto the skillet.
  3. Dice up your bacon, potatoes and ham.
  4. Brown up your potatoes - these will take the longest. Place browned potatoes into a large bowl
  5. Brown diced ham and place in large bowl with potatoes
  6. Cook bacon and drain. After draining place in bowl with other ingredients.
  7. Spray more canola oil onto skillet and scramble the eggs. Place eggs into bowl.
  8. Let mixture chill for about 30 minutes.
  9. Lay out tortillas and place cheese on bottom.
  10. Take 2/3 cup of mixture and place on top of cheese.
  11. Roll up burrito
  12. Repeat 4x
  13. Place all of the burritos in a freezer safe container/ freezer bag.
  14. Reheating frozen burrito- warm frozen burrito for 2 minutes :)
