I’m lucky to have been given so many squashes/zucchinis this summer season! We can’t get enough of it in our house. They’re both a perfect side dish to anything you’re making and very filling at that. Instead of the usual grilled squash/zucchini I decided to spice things up and make some squash/zucchini “fries”. These are our alternative to regular fries as they’re baked, full of flavor and with no guilt of having seconds.
INGREDIENTS

2-3 medium zucchini/squash, sliced
into skinny sticks

2 large eggs, beaten
·
¼ cup milk
·
¼ cup of all purpose flour
·
1/2 cup bread crumbs (you can use
panko)
·
2 tablespoons Parmesan cheese
·
1 teaspoon garlic powder
·
1 teaspoon paprika
·
1 teaspoon parsley
·
1 teaspoon onion powder
·
Salt & Pepper- to taste
- Preheat oven to 425°. Spray a baking sheet with cooking spray and set aside.
- Create your dipping stations ; In a small bowl, beat egg with a fork until frothy and add milk. In another bowl, mix together flour and spices and in a third bowl, place your bread crumbs.

Dip the zucchini sticks into the flour, then egg/milk mixture and then
into the bread crumb mixture.
- Place the sticks on the prepared baking sheet.
- Bake zucchini and squash at 425° for about 20 minutes, or until golden brown and crispy.
- Serve warm with spicy sriracha ranch dressing, marinara sauce or just as is.

dinner dish!
