I really enjoyed this cake. I wanted something that was different and something that wouldn't make me feel glutenous after eating it.
Ingredients :
- 2/3 c olive oil
- 6 tablespoons of cocoa pwder
- 1/2 cup boiling water
- 2 teaspoons vanilla extract
- 1 /12 cups of alomnd meal
- 1/2 tsp baking soda
- 1 cup superfine sugar ( you can use regular sugar as well )
- pinch of salt
- 3 eggs
Directions:
- Preheat your oven to 325 degrees . Grease your circle cake pan with a little oil and line the base with parchment paper.
- Measure and sift the cocoa powder into a bowl or pitcher and whisk in the boiling water until you have a smooth, chocolatey, runny paste.
- Whisk in the vanilla extract, then set aside to cool a little.
- In another small bowl, combine the almond meal with the baking soda and pinch of salt.
- Beat sugar , olive oil and eggs in a mixer on high speed until well incorporated (approximately 3 minutes)
- Turn the speed down a little and pour in the cocoa mixture.
- Slowly add in almond meal to mixture.
- Pour all of the mixture into your cake pan and bake for 40-45 minutes or until the sides are set and the very center, on top, still looks slightly damp.
- Let it cool for 10 minutes on a wire rack.
