Who doesn't love taquitos? :)
Ingredients:
- 3 chicken breasts- shredded
- 1.5 cups of shredded cheese
- 4 oz can chopped green chilies * optional
- 1/2 cup chopped green onions * optional - I used a regular onion instead
- 2 garlic cloves, minced
- 1/4 teaspoon pepper
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- Salt and pepper - to taste
- 12-6 flour tortillas
Optional: Sour cream, guacamole and salsa for dipping purposes:)
Directions:
- Preheat oven to 425 degrees.
- Heat skillet on a medium-high heat setting and add in oil
- Cook onion and when translucent add in garlic, chilies and saute
- Add in chicken and all seasonings ( don't go crazy because you can always go back and add more to your taste).
- Take everything from skillet and put into a bowl and add in cheese.
- Take flour tortillas and cut in half or in quarters ( depending on how big you would like them)
- Place a spoonful of the chicken mixture onto the tortilla and roll.
- You can use oil to help hold the rolled tortilla together.
- Take all taquitos and place on a baking sheet. Brush lightly with oil.
- Bake for 10 minutes.
I put all extra taquitos that we weren't going to eat in a freezer bag so that we could have them for later.
Enjoy!
