Gluten Free Chocolate Olive Oil Cake


I really enjoyed this cake. I wanted something that was different and something that wouldn't make me feel glutenous after eating it. 


Ingredients : 

  • 2/3 c olive oil
  • 6 tablespoons of cocoa pwder 
  • 1/2 cup boiling water 
  • 2 teaspoons vanilla extract 
  • 1 /12 cups of alomnd meal 
  • 1/2 tsp baking soda 
  • 1 cup superfine sugar ( you can use regular sugar as well ) 
  • pinch of salt
  • 3 eggs

Directions: 

  1. Preheat your oven to 325 degrees . Grease your circle cake pan with a little oil and line the base with parchment paper.
  2. Measure and sift the cocoa powder into a bowl or pitcher and whisk in the boiling water until you have a smooth, chocolatey, runny  paste. 
  3. Whisk in the vanilla extract, then set aside to cool a little.
  4. In another small bowl, combine the almond meal  with the baking soda and pinch of salt.
  5. Beat sugar , olive oil and eggs in a mixer on high speed until well incorporated (approximately 3 minutes)
  6. Turn the speed down a little and pour in the cocoa mixture. 
  7. Slowly add in almond meal to mixture. 
  8. Pour all of the mixture into your cake pan and bake for 40-45 minutes or until the sides are set and the very center, on top, still looks slightly damp. 
  9. Let it cool for 10 minutes on a wire rack.

Month 3 Favorites!

I can't believe that it's already been 3 months! Here were Haidyn's favorites ( and mine) for her thIRd month.



01. Circo Musical Mobile - Haidyn cannot wait to lay down and stare at her mobile during bedtime. It's become a little routine for herself that if she doesn't see her mobile going, she doesn't have to go to sleep yet. I love how she lights up looking at her owls. :)
02. Boppy Pillow - This has been my lifesaver from day one. It was helpful when I needed a helping hand breastfeeding, propping her up now for her to try to hold her bottles, letting her lounge on it while I get ready and having her experience tummy time. You name it, I had this pillow helping me every step of the way. I also loved how you could change the slip cover any time you wanted and that you could wash the entire thing if it ever got dirty.
03. Whale Bath Tub- This bathtub is a prop in the middle of it so that younger babies are able to sit up for bath time. When your baby is able to sit all by themselves, you are able to take the prop out of it! How cool is that?!?
04. Thermometer Ducky- Keeping bath time in mind, this little guy helps me out with the right temperature for Haidyn's baths. Sometimes I won't know whats too cold for her , but this little guy's tummy turns WHITE if it's too HOT and stays uncolored if it's COLD.
05. Britax Travel System- I swear by this set. This is one of the few car seats that an infant can be in until they're 1 years old. It's easy to clean and lightweight. The stroller itself it's easy to maneuver. There is a lock on the front wheel so that you can just drive the stroller straight or you have the option of taking the lock off and driving it all sorts of crazy ways! The shade from the stroller and the car seat also almost overlaps each other so that hidden from the sun. Baby can face forward or towards you as well as use the stroller for many years to come.
06. Pandora - Disney (Children's) Radio- This station is crazy good! She lights up to all of the high energy music and she will happily listen all day. She doesn't like it to be quiet.
07. Safety Grooming & Health Kit- This kit has just about everything you can imagine in it to help you out. I got the girl one, just so everything is pink. It also makes everything easier to find in our home . :)

Jon's Basic Training Graduation

My entire family to say the least is EXTREMELY proud of Jon and his accomplishments.  Graduation took place at Fort Still, OK on July 3rd, 2014.  My mom attended the graduation since we were unable to go. It killed me knowing that I couldn't be there for him on his big day. I've attended everything for Jon and this is the one occasion I had to sit out of ( and hopefully it will be the ONLY one).  I don't think I've seen my mom happier and prouder than this day. They haven't seen each other for 9 weeks ( give or take). My mom called me excited that she FINALLY saw Jon.











Now, I see Jon in a different light. Growing up, we were Navy Brats and we swore to each other that we wouldn't join the service because we hated all the traveling, but that all changed. I remember the day that Jon broke the news about him joining. We were all shocked. We couldn't believe that he wanted to join, but his reasons for joining made it so we no longer questioned him. It's hard to think that he will most likely always be far away from my Mom and I, but we couldn't honestly think of anything else that we would rather see Jon do. I can't believe the my little brother is now serving our country. He's going to do so much good in this world, just like I knew he would.

Kmaecags' Flexible Dieting & Porncake

I want to take a minute to praise Krissy Cagney. This woman changed my life. She's changed the way I look at losing weight and being healthy overall. This woman has no bullshit in her life because she doesn't let anything get her down. This woman inspired me to ditch the cardio because lifting will get you results. I've gone through her training and she really does change you. She's taught me that being fit doesn't just mean your body. Being fit deals with being happy with everything in your life. I've learned to look at my progress through a new set of eyes. She will never know how grateful I am of her that I still make grown men walk stare at the weight I lift.



Her new books are my current read. Flexible Dieting is a book that deals with counting macros instead of counting calories. Counting calories is what most people are use to.. which most of you know DOESN'T work. Counting macros does work. It's hard work but well worth it. I've done it before while on her training program and I've gotten amazing results. I currently can't go to the gym as much as I'd like, but I've committed 2 days a week and counting macros indefinitely. I can eat what I want when I want just as long as it fits my macros.



Porn cake on the other hand are delicious recipes ( and pictures) of amazing protein pancakes. It's worth looking over just the pictures. WOW!

Haidyn Three Months!



LENGTH: 23 inches

LIKES: 
-Being talked to!! She will have an entire conversation with you . 
-"Itchy Itchy Spider" song by Lola E:)
-Getting a bath ! We finally got her to be excited about bath time with no more crying!! 
-Drinking water !! She will guzzle an entire bottle down.
-Singing "Malcolm in the Middle" theme song with Daddy.
-Doing "Supa-Baby" with Mommy. 
-Her schedule. She knows her schedule of eating, going to school and sleeping
-When Daddy picks her up at school! The look on her face is priceless
-When she sees Mommy after work. She knows exactly who I am. :) 
-FaceTiming with Uncle Jon! She drools over him! (Literally)
-Sucking her thumb!!

DISLIKES: 
-The wind in her face. She gets a little freaked out. 
-Cold water. We tried taking her to the lake and put her in a little pool.... not having it. 

MILESTONES: 
-Giggling! It has to be the greatest thing in the world!
-Scooting around! She will scoot when she's on the floor to get the toys she wants.
-She is able to grab and hold onto her toys.
-She's starting to become interested in food. She will look at you when you're eating. 


EVENTS:
-Daddy's 1st Father's Day!

Younique Moodstruck 3D Fiber Lashes Mascara- Product Review

There's nothing I love more than long lashes. I'm completely jealous of my husband and daughter for having the world's perfect eyelashes. Unfortunately, I have to create my lashes myself since I wasn't blessed with them :) I've used different types of mascaras - my favorite mascara is
I tried putting on fake lashes on myself  (that was a complete joke). I've even paid to have lashes put on professionally because I really wanted that full eyelash look  (that was just really expensive and unrealistic for me).

So when my sister bought my mom and myself Younique mascara we were thrilled to try some new for our lashes. My sister in love with this mascara and swears by it. She uses it everyday and she has killer lashes!

After using the mascara I was shocked. I didn't know that mascara could make your lashes pop exactly like fake eyelashes do. I was skeptical at first because I've tried so many things, but this actually works. It really does make a difference in your lashes. Your lashes will be fuller, longer and manageable. It's easy to apply and even easier to take off at the end of the day.

It's a four step process.

  1. Apply one coat of your favorite mascara and let completely dry.
  2. Doing one eye at a time- apply a coat the transplanting gel on your lashes. 
  3. Apply the natural fibers onto your lashes as if you would mascara. 
  4. Coat your lashes again with transplanting gel. 
You can apply more and more coats to achieve your desired fullness and length!

Baked Taquitos

Who doesn't love taquitos? :) 

Ingredients:

  1. 3 chicken breasts- shredded
  2. 1.5 cups of shredded cheese
  3. 4 oz can chopped green chilies * optional 
  4. 1/2 cup chopped green onions * optional - I used a regular onion instead
  5. 2 garlic cloves, minced 
  6. 1/4 teaspoon pepper
  7. 1/4 teaspoon cumin
  8. 1/4 teaspoon paprika
  9. Salt and pepper - to taste
  10. 12-6 flour tortillas 
Optional: Sour cream, guacamole and salsa for dipping purposes:) 

Directions: 
  1. Preheat oven to 425 degrees.
  2. Heat skillet on a medium-high heat setting and add in oil
  3. Cook onion and when translucent add in garlic, chilies and saute 
  4. Add in chicken and all seasonings ( don't go crazy because you can always go back and add more to your taste). 

  5. Take everything from skillet and put into a bowl and add in cheese. 
  6. Take flour tortillas and cut in half or in quarters ( depending on how big you would like them) 
  7. Place a spoonful of the chicken mixture onto the tortilla and roll. 

  8. You can use oil to help hold the rolled tortilla together. 
  9. Take all taquitos and place on a baking sheet. Brush lightly with oil. 
  10. Bake for 10 minutes. 
I put all extra taquitos that we weren't going to eat in a freezer bag so that we could have them for later.

Popovers

The perfect pairing to any soup or main dish for dinner. These popovers are easy to make and cheesey! Mmm. :]

Ingredients:


  1. 3 eggs 
  2. 3/4 cups of all-purpose flour
  3. 1/4 teaspoon salt 
  4. 1/2 teaspoon ground pepper 
  5. 1/2 teaspoon herbs de Provence 
  6. 4 tablespoons chopped parsley
  7. 1 cup milk
  8. 1/2 cup Parmesan cheese 
  9. 1/2 cup Cheddar cheese 

Directions: 
  1. Preheat oven to 400 degrees 
  2. In a mixer, combine all ingredients. Blend at a medium speed. 


  3. Grease a nonstick muffin pan 
  4. Pour batter into each muffin tin filling 3/4 full. 
  5. Bake popovers for 20 to 25 minutes
