You can never have too many chicken recipes.. am I right? I loved this recipe from the moment I saw it on Pinterest. I had to recreate it. It's simple and delicious. The original recipe had the chicken breasts cut into small pieces- almost chicken nugget size, but that doesn't fly in our household. You can easily pair this with mash potatoes, but we had this with garlic butter pasta . MMM.
Ingredients:
- 3 large chicken breasts
- 1 sleeve Garlic Ritz crackers - you could use regular
- 1/4 t salt
- 1/8 t pepper
- 1/2 C milk
- 1 egg, beaten
- 3 C cheddar cheese, grated
- 1 t dried parsley
Directions:
- Crush sleeve of ritz crackers. I crushed mine in the sleeve they were already in. There's no need to dirty up more dishes. ;)
- Take 3 separate small pans to house milk and egg/ cheese/ cracker crumbs.
- Add salt and pepper to cracker crumbs and milk and egg mixture.
- Dip each piece of chicken into the milk/egg mix, then the cheese and last the cracker crumbs.
- Spray a 9x13 pan with cooking spray and lay the chicken inside the pan.
- Sprinkle the dried parsley over the chicken.
- Cover the pan with tin foil and bake at 400 degrees for 35 minutes.
- Remove the tin foil, bake for an additional 10 minutes, or until golden brown and crispy.
