Mango Lime Cheesecake | Haidyn's Birthday Cake



If you're searching for a sinful cheesecake to devour, this is your cheesecake. Many of you know that I love cheesecake (sometimes I don't think love is a strong enough word to express my feelings for it)  so this is heaven on Earth for me. This cheesecake went perfect with Haidyn's birthday theme and this cheesecake went fast. It took me two days to make since I didn't have an entire day to make it. Note that this cheesecake is a process, but it's worth every single minute. This is a dupe for the Cheesecake Factory's Mango Key Lime Cheesecake!

INGREDIENTS

CHEESECAKE

  • 1 c flour
  • 1/4 c packed brown sugar
  •  1/3 c butter, softened
  • 2/3 c coconut 
  • 3 pkg (8-oz each)  cream cheese, softened
  •  3 Tbsp corn starch 
  •  3/4 c sugar 
  •  2 eggs 
  •  1 tsp vanilla
  •  zest of 2 limes 
  •  1/2 c lime juice, which is 5 limes (if using Key limes, use half the amount)

MANGO MOUSSE
  • 2 c mango pulp (about 2-3 ripe mangos, pitted and peeled) 
  • 2 tsp lemon juice (or orange juice)
  •  1 small pkg sugar free orange jello (or 2 tsp plain gelatin if it's easier for you)
  •  2 c heavy whipping cream 
  •  2 Tbsp powdered sugar
MANGO GLAZE
  • 1 mango, peeled and pitted 
  •  1 tsp lemon juice (or orange juice)
  • 2 Tbsp cold water 
  •  2 Tbsp corn starch


DIRECTIONS

MAKING THE CHEESECAKE
  1.  Preheat oven to 350 degrees.  
  2.  Grease the inside of your cheesecake pan with nonstick spray and line the bottom with parchment paper
  3.  Blend the softened butter and the brown sugar together until creamy.
  4.   After butter and sugar is creamed together, mix in the flour and stir in coconut.
  5.   Press mixture into bottom of spring form pan and bake for 10 minutes.

  6.   As crust is baking, start on the cheesecake. Cream together the cream cheese, corn starch, and sugar until it is all smooth and creamy.
  7.  Blend in the vanilla and the eggs. (one at a time) 
  8.  Add in the zest of two limes, the juice of 5 limes ( ½ cup of lime juice) and mix well.
  9.  Pour onto prepared coconut crust and bake in oven for 45-50 minutes, or until the center appears to be firm.
  10. Remove from oven and cool completely before putting in the refrigerator.  

MAKING THE MANGO MOUSSE

  1.   Peel and pit your mangoes.  Purée them in a blender. (I bought frozen mangoes to puree so I just thawed them before pureeing.)
  2.  Add the lemon juice to pureed mangoes and heat in a small pan.
  3.   In a small bowl take hot water and dissolve the entire gelatin. Add gelatin mix into pan.
  4.   Once jell-o is dissolved, remove from heat and let cool.
  5. Meanwhile, whip your heaving whipping cream in a medium bowl and sprinkle a couple tablespoons of powdered sugar.  Whip cream until light peaks appear.  Over beating will curdle.  Make sure you have a high fat content whipping cream.  

  6.  Fold whipped cream into cooled mango mixture.  
  7.   Pour onto the cooled cheesecake and refrigerate until mousse is firm.  


MAKING THE MANGO GLAZE

  1.  Puree your other mangoes same as you did when making your mousse.   
  2.  Add the lemon juice to the purée and heat the mixture to a low simmer.  
  3.  Create slurry of corn starch and cold water in a small bowl.  
  4.  Pour the corn starch mixture into the hot mixture and stir well.  Once mango puree is thick remove from heat and cool.
  5.  Pour glaze onto the mousse and smooth it all over the top.  
  6.  Place back in the refrigerator until ready to serve.

  7.    Before serving, take a warm knife and run it around the edges just to make sure that everything will come clear easily from the side of the spring form pan.

Haidyn's 2nd Birthday | Lilo & Stitch Theme



Nevada’s weather has been insane this year so we decided not to chance it and book a place indoors for Haidyn’s birthday. I didn’t like the idea at first because it didn’t feel like we did much except pay for people to set it all up, but when it came down to it I was extremely glad we did. I didn’t do much for the party except for order invites; bake a cheesecake and cupcakes for everyone. We’re hoping that this will be our last year throwing a party outside our home (keep your fingers crossed for us). This year we went with a Lilo & Stitch theme. Haidyn is obsessed with her “Stitch”, so we decided that this theme would be perfect. Netflix also helped us out in putting all the Lilo & Stitch movies up. (Seriously, thank you Netflix for occupying my child with Stitch for countless hours .We have now watched every single movie more times than we can count on all of her fingers and toes)

Our party was held at Paradise Fun Cove Center where the children could bounce off the walls (literally) . I don't know if we could've picked a better location for the kids to run and play. Waymon and I had fun "chasing" Haidyn in the bounce houses as well. We also encouraged all the other parents to do the same with their kids. Our family and friends came to celebrate Haidyn on her big day. She was so happy to see everyone and we were just as happy to see everyone.  We had pizza, Dickey's BBQ, Mango Lime Cheesecake , Mango and Coconut Cupcakes. Everyone left stuffed and with tired kids. Second birthday is in the books . My baby girl is no longer a baby .

Happy second birthday to the love of my life.

 Thank you for brightening each and every day as well as bringing so much joy everyone around you.

 You have no idea how happy you make everyone including your Ate Sass and Rory.
 I cannot imagine a world without you and thankful that I never have to.
 I’m so glad you’re here as my best friend.

 

Watching you grow into the beautiful soul you are today makes me so proud to be your Mama. 
My wish for you is to conquer this next year like you did the last and strive for anything and everything you want in this world. 
You will do it. You can do it. 
And I will be behind you every step of the way.

NYX Ulta Haul





Lipstick is definitely one of my must haves when it comes to makeup. When it comes to selection and affordability you can’t beat NYX.  Recently, they had a buy 2 get 1 free promo at Ulta and I knew I had to snag a few of the couple shades I’ve been dying to get my hands on. As you can tell I love my dark or nude matte colors, but I’m also trying to branch out to more spring bright colors such as pinks and corals. I’m also guilty of looking for dupes for the popular brands because I can’t justify the cost of a brand new Kylie Jenner Lip Kit to my husband. Thankfully, NYX has almost every popular color out there duped!
