Skinny Philly Cheese Steak Stuffed Peppers



One of our favorite restaurants in town is a local Philly Cheese steak place. It’s to die for, but it’s further away from our home than it use to be L Now, we can enjoy our favorite in our home and less calories. If that’s not a win I don’t know what is. Also, Haidyn loved helping with this dish. You will be in and out of the kitchen within 30 min! 


INGREDIENTS

  • 4 Green Peppers
  • 1 Sweet Onion, sliced
  • 1-1 ½ shaved steak (we pre-cooked ours on the grill)
  • 2 Cup Shredded Mozzarella cheese, divided
  • 1 tablespoon EVOO (we used coconut oil )


DIRECTIONS
  1.   Heat pan up and add in coconut oil.
  2.  Add in onions and sauté until they're translucent.
  3.   Add in steak (ours was pre-cooked and pink so we combined onions and steak together, if you don’t precook your steak you will have to cook until steak is pink) and season with salt and pepper.
  4.     Preheat oven to 375º .
  5. While preheating prep your baking sheet by lining it with foil and greasing it .

  6.   Cut green peppers length wise and remove seeds and ribs. ( Don’t cut off the tops like I did )
  7.   Fill bottom of pepper with cheese. (You may divide the cheese amongst your peppers).

  8. After the cheese, layer on the onion and meat mixture.

  9. Add the last of the cheese on top of the meat mixture.
  10.  Cook peppers for 15-20 minutes or until cheese is fully melted.
