Welcome Home Rory


We are pleased to introduce to everyone the newest addition to our family Lorelai “Rory” Gilmore Wells. ( Yes, she's named after the Gilmore Girls, but are you really that surprised?) We welcomed her to our family last week at 6 weeks old and could not be more thrilled.  Rory is a pure bred blue nose pit bull. Waymon and I have been talking about a dog for the longest time and when I saw her I instantly fell in love- literally. I honestly, didn’t think Waymon would give to getting her but as soon as her saw he fell in love too.  Waymon is now officially surrounded by 3 Wells girls and is nothing short of content.




Rory is the sweetest little thing. So far, she’s the calm one out of our bunch. She can hold her own when it comes to Haidyn or Sass. She loves to play and just snuggle with you as much as possible. Her being a pit bull didn’t scare us at all when it came to choosing what breed to bring around our family, it’s how you raise them honestly.  This little girl is definitely spoiled by everyone. I can’t wait to spend more time with her outside this summer! Sass isn’t too thrilled about her baby sister but I’m sure she’ll warm up to Rory or just learn to ignore her all together.
 (If you haven’t noticed Sass is a pre-Madonna).

One Hoppy Easter


I honestly, dreaded this Easter weekend because we over planned in the beginning but it all worked out in our favor. Easter weekend we finally took our new addition Rory home,  attended a birthday party, met the Easter bunny, a visit with Lola and Papa Lolo and Sunday with Grandma and Grandpa for Easter fun. If you asked Waymon how I was feeling the Friday before everything  he wouldn’t told you that I had a mini breakdown haha, the curse of being forever anxious. 




I don’t know what it is about the holidays that burn us out. This Easter, we wanted to take it easy with everything from the cooking, egg-cellent fun for Haidyn and etc. We didn’t want to do anything to crazy since Haidyn’s birthday is right around the corner. So we spent the day with family, eating too much food and just relaxing- the most perfect holiday.

 


Sunday was also the perfect chance for our new pup Rory to meet her puppy Uncle Woody and it was the sweetest thing. Woody was so excited that he was jumping around Rory and Rory was so nervous that she just hid until she wanted to be found. Rory was welcomed by the rest of the Wells’ and she fit right in. I was honestly, surprised and how well behaved she was at Grandma and Grandpa’s house. How is it that I never believe that my children are actually well behaved?  






Our nap-less Haidyn has fun with the pups and running around watching her favorite movies with Grandma. I hope that the rest of our 2016 holidays turn out much like this one. I didn’t leave overly exhausted or drained from the holiday itself. It was the type of day that made you just happy at the end of the day. Isn’t that how it should be?

Apple Fritter Bread



This bread is light and so delicious. I chose to make this bread since I had some apples that no one was going to eat. I brought it into work for everyone to enjoy and it was gone before I knew it! This bread has a texture of a coffee cake so it’s perfect for any time of the day or occasion. Haidyn even approves of this loaf for her afternoon snack.

 
 
INGREDIENTS

BREAD
  1. 1/3 cup light brown sugar
  2. 1 teaspoon ground cinnamon
  3. 2/3 cup white sugar
  4. 1/2 cup butter, softened
  5. 2 eggs
  6. 1 1/2 teaspoons vanilla extract
  7. 1 1/2 cups all-purpose flour
  8. 1 3/4 teaspoons baking powder
  9. 1/2 cup milk or almond milk
  10. 2 apples, peeled and chopped (any kind), mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon
CRÈME GLAZE
  1. 1/2 cup of powdered sugar
  2. 1-3 tablespoons of milk
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2.  Spray a 9x5-inch loaf pan with non-stick spray
  3. Mix brown sugar and cinnamon together in a bowl. Set aside.
  4. In another bowl, beat white sugar and butter together until smooth and creamy.
  5. Beat in eggs, 1 at a time, until blended in.
  6. Add in vanilla extract.
  7. Combine flour and baking powder together in another bowl.
  8. Add into creamed butter mixture and stir until blended.
  9. Mix milk into batter until smooth.
  10. Pour half the batter into the prepared loaf pan.
  11. Add half the apple mixture, then half the brown sugar/cinnamon mixture.
  12. Lightly pat apple mixture into batter.
  13. Pour the remaining batter over apple layer and top with remaining apple mixture, then the remaining brown sugar/cinnamon mixture.
  14. Bake load for 50-60 minutes.
  15. To make glaze, mix powdered sugar and milk or cream together until well mixed.
  16. Let cool for about 15 minutes before drizzling with glaze.
