Ramen Burger

In our household, I've turned Waymon to more and more towards Asian/Islander food. I don’t think he can get away from it being that I’m Filipino- sorry honey! :)  He is coming around to enjoying mostly everything that I make, but this recipe was something we saw together at our local L&L. We knew that we had to try it for ourselves at home. We were skeptic on how it would taste/ how it would all work exactly, but it turned out. ….  This burger isn't for those who are on a strict diet- you have been warned!

INGREDIENTS
( ingredients are for 3 burger)

  • 2 packet of instant Ramen noodles
  • 2 eggs
  • Salt and Pepper * to taste
  • 1 lb. ground beef
  • 2 scallions
  • 1 tablespoon of soy sauce
  • Drizzle of sesame oil
  • 1/4 cup of ketchup
  • 1/4 cup mayo
  • Sriracha hot sauce *measure to your taste
  • 3 slice of cheese of choice *we used provolone
  • 1 tablespoon of oil
DIRECTIONS
  1. Boil the noodles in salted water according to instructions, but do not add the seasoning packet. Drain and leave to cool slightly for a minute.
  2. Crack an egg into a bowl and beat together.
  3.  Toss the noodles into the beaten egg, divide in six, and press each half into a plastic-wrap-lined mold the same size as you want your burgers to be.

  4. Fold the plastic wrap back over the noodles and place a weight on top to compress as they cool. Refrigerate the "buns" for at least 30 minutes.

  5. Mix sliced scallions, soy sauce, sesame oil and salt and pepper in with the beef forming 6 burger patties (similar size to your buns).

  6. Heat up two frying pans; frying the burgers in one pan and the ramen burger "buns" in the other until golden and crispy.

  7. Mix together ketchup, mayo and sriracha as the sauce for the burgers.
  8. Once burgers are done cooking take off of the heat and place a slice of cheese on top take off the "buns" from the heat.
  9. Create your ramen burgers and enjoy!

Throwback Thursday : Baby Haidyn

It's still crazy to me that Haidyn has grown so much in the past couple of months. I took pictures of her everyday for 57 days while Jon was at basic training so that he didn't have to miss her while he was away. I'm glad I saved all of her pictures because he never got to see them.  It still amazes me how much she grew in such a small amount of time and I can't wait to see the beautiful little girl she grows into.
