Zucchini Squash Fritters





Another zucchini/squash recipe ( yay!!!) I received another batch of zucchini and squashes and decided to create something a little different with them. So far, I’ve baked, sauteed and grilled them, but  never FRIED! This batch was easy to whip up at a moment’s notice. You can interchange the seasoning in the mixture to what you have at home or just add salt and pepper. Recipe is kid friendly as well. You would never know that you were eating vegetables. Ah the magic of frying. 

 
 
INGREDIENTS

  • 2 cups of raw Squash and zucchini, grated (you can do one or the other if you don’t have both)
  • 1 cup Onion, finely chopped
  • 2 Eggs (I used egg whites and it came out perfect!)
  • 6 Tablespoons of Flour (more or less depending on your mix)
  • 2 teaspoons Sugar
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Paprika 
  • 1/4 cup Parmesan cheese ( optional
  • ½ teaspoon Garlic powder
  • ½ teaspoon of Baking Powder 


DIRECTIONS

  1. Thoroughly wash squash and cut ends. 

  2. Grate squash with a box grater, enough to equal 2 cups. ( You don’t have be exact)
  3. Whisk eggs and set aside.(I used egg whites for this recipe)
  4. In a large bowl add in all ingredients and combine. (You may add in more flour if you feel like the mixture is too wet. It will be a little wet and runny, but mixture is still perfect! )

  5. Heat a skillet to medium heat adding in oil to fry fritters.
  6. Drop the squash mixture by spoonful into hot skillet.
  7. Cook about 3-5 minutes on both sides until brown.
  8. Remove to a paper towel lined plate and let drain.
  9. Serve warm and enjoy! I served my fritters with a spicy mayo mix on the side.

Cherry & Peach Coffee Cake w/ Crumb Topping



I love this recipe because it’s so easy and versatile. You can change the entire cake with just switching out the pie filling of your choice. I made 2 cakes with half peach and half cherry for more variation.  I made this ahead the night before my Friday work meeting and it turned out better than I ever envisioned.  My husband even helped and loved the recipe, which you know that’s a huge win for me! Remember that pie filling from a month ago? I used it here!



INGREDIENTS:

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup butter, melted
  • 1/2 cup milk
  • 3/4 cup sugar (if you prefer less sugar use 1/2 cup)
  • 1/2 tsp salt
  • 2 eggs, slightly beaten
  • 1 can cherry pie filling or flavor of your choice ( I used store bought ½ can cherry filling and homemade peach pie filling )


DIRECTIONS

1.      Preheat oven to 325 degrees.
2.        Grease a 9×13 baking pan with butter.
3.       Place the flour, sugar, baking powder, salt and melted butter in a large mixing bowl and stir together with a fork until crumbly.
4.       Take 1/2 cup of the crumbs out of the bowl and set aside.
5.       In a small bowl whisk the slightly beaten eggs and milk together, add milk mixture to the large bowl of crumbs and stir until incorporated.  (There will be small lumps in the batter.)
6.       Pour the batter into your prepared 9×13 inch baking pan.
7.        Spread the cherry pie filling over the cake. ( I spread my cherry filling on one side of the cake and peach of the other. )

8.        Sprinkle the reserved crumb topping over the pie filling.
9.       Bake at 325 degrees for 40 to 45 minutes. Check the cake at 35 minutes.
10.    Remove from oven, place on a cooling rack.

Ham & Cheese Hawaiian Sliders




Potlucks are coming up with the holiday season and here is a recipe that is easy to recreate, doesn’t hurt your pocket and you probably already have everything you need at home! When I stumbled across this recipe I knew I had to recreate it for my own work potluck. I set the plate of sliders down and before I knew it all of them were gone! They were a huge hit and I didn’t have to think too much about making everything ahead of time. If your work doesn’t have an oven ( like my work) you can use the microwave to create these sliders. This recipe would be great for unexpected guests!

 
INGREDIENTS

  • 12 Slices of deli honey ham
  • 6 Slices of Swiss cheese
  • 1/2 tablespoon Poppy seeds
  • 1 tablespoon Dijon mustard
  • 1/4 cup Butter melted
  • 1/2 tablespoon Onion Powder
  • 1/2 teaspoon Worcestershire sauce
  • 1 package  KING'S HAWAIIAN Original Hawaiian Sweet Dinner Rolls

DIRECTIONS
  1. Cut entire package of rolls in half.
  2. Place slices of ham and Swiss cheese onto the bottom half of the bread.

  3.  Replace top half of the bread once completed.
  4. In a small container, whisk together poppy seeds, Dijon mustard, melted butter, onion powder.


  5. Cut rolls to create individual sandwiches.
  6.  Pour sauce over the rolls, just covering the tops.
  7. Let rolls sit for 10 minutes.
  8.   Microwave for 30- 60 seconds, checking every 20 seconds or so for a potluck. At home bake at 350 degrees for 10 minutes or until cheese is melted.

  9.  Uncover and cook for additional 2 minutes until tops are slightly browned and crisp.
  10. Serve warm.
